Easy Chicken Salad Recipe

Eating healthy does not have to be difficult. Repeat that with me: It doesn’t have to be difficult! You don’t have to spend all your free time in the kitchen preparing lavish, healthy meals from scratch. There are plenty of recipes you can whip up in almost no time and feel completely guilt-free about eating.

Here’s one of my favorites – a quick, simple, and delicious chicken salad that you can throw together with a rotisserie chicken from your local grocer and a few other ingredients you probably have in the fridge already!

Here are the only ingredients you’ll need: 

  • 2 cups of shredded rotisserie chicken meat
  • ½ cup of mayonnaise (I prefer Primal Kitchen® mayo, as this brand is Whole30® approved!)
  • 2 stalks of celery chopped (about 2/3 a cup)
  • 10-12 red or green seedless grapes, sliced

Directions:

Chop the chicken, celery, and grapes to the size you prefer, mix with mayo, and enjoy! That’s it!

I like to place my chicken salad on large leaf lettuce and eat it as a wrap, or you can even top a bed of lettuce with the chicken mixture and enjoy a tasty salad. Feel free to add as many fresh veggies as you want. If you like walnuts, add a few of those, too. Walnuts help to decrease inflammation in the body and are rich in antioxidants.

No matter how you prepare your chicken salad to fit your own taste, you’ll be amazed at how fast and simple the recipe is, not to mention how yummy!
